As promised in my “10 Tasty Dinner Recipes I Make All the Time” post, here are ten delicious and easy soup recipes I make all the time. Every single Wednesday is “soup night” at my house, no matter if it’s winter, spring, summer, or fall. It’s a tradition I began many years ago, and it stuck. My family knows what to expect for dinner on Wednesdays, and thankfully, they love it.
Soup is such a comforting meal, isn’t it? Making it is therapeutic I think, you know when you chop the vegetables and go back to stir the soup every so often? It simmers on the stove, making your house smell so homey.
Soup doesn’t have to be only a fall or wintertime meal. You can eat soup any time of the year. Some of the soups below are light, and some are more filling. All of them are delicious!

Green Minestrone ~ I have been using this soup recipe for well over ten years now. I make it gluten free by using GF pasta and have prepared it vegetarian by omitting the pancetta and using vegetable broth. It is a versatile soup because you could really throw in whatever vegetables you want.
Easy One Pot Tortilla Soup ~ Here is another soup I have been cooking for years. I make homemade enchilada sauce for the soup, but you can use the canned sauce to save time. This soup has such delicious flavor!
Zuppa Toscana ~ This is so much better than the soup served at Olive Garden! It is a bit spicy and hearty.
Chicken Pot Pie Soup ~ This is a newer recipe I added to my soup rotation. It is a creamy soup and perfect for a cold evening.
Italian Lentil Soup ~ I make this soup in the crockpot. It is vegetarian, dairy-free, and gluten-free. It has terrific flavor and is so easy!
Tomato Cannellini Bean Soup ~ This soup is also vegetarian, gluten-free, and dairy-free. I save time by using canned cannellini beans instead of soaking dry beans overnight. I use two cans for this recipe.
Cream of Fresh Tomato Soup ~ This soup is perfect for summer because the recipe calls for fresh tomatoes. I have been making this soup for years after I once saw Ina Garten make it on Barefoot Contessa 🙂
Smokey Chili Mac Soup ~ This recipe makes a huge pot of soup which is perfect for company or better yet, leftovers! I have used both kale and spinach in this one, and both taste great.
French Onion Soup ~ My husband LOVES onion soup, and this recipe is quite easy. I sometimes use gruyere cheese, sometimes mozzarella, and at times provolone. Feel free to use whichever cheese you prefer.
Corn and Cheese Chowder ~ My family loves chowder! This recipe works well with fresh summer corn.
